Preparation
- Lay the chicken thighs on a cutting board, skin side down. Use a knife to run down both sides of the bone and carefully pull the bone up. Cut the meat away until fully detached, removing any sharp pieces.
- Cut the deboned chicken thighs into small, bite-sized pieces while keeping the skin attached to retain moisture.
Seasoning and Cooking
- In a mixing bowl, toss chicken pieces with olive oil, salt, onion powder, and garlic powder until evenly coated.
- Lightly spray the air fryer basket with cooking spray, then arrange the chicken pieces in a single layer, skin side up.
- Air fry at 390°F (199°C) for about 18 minutes until crispy.
Making the Sauce
- In a saucepan, melt the butter or ghee over medium-high heat. Once melted, add minced garlic and sauté for about a minute.
- Stir in hot sauce, honey (or soaked dates), apple cider vinegar, and red chili flakes, mixing well.
- Let the sauce simmer on medium heat for about 8 minutes until thickened.
Final Assembly
- Once chicken is cooked, transfer to a bowl and toss generously with the prepared sauce until each piece is well coated.
- Garnish with chopped scallions before serving.
Alternative Cooking Method
- If using an oven, preheat to 425°F (218°C). Spray a baking sheet with oil, arrange chicken pieces, and bake for 15 minutes, broiling if necessary for crispiness.
Notes
For crispy bites, use skin-on thighs and avoid overcrowding the air fryer. Adjust hot sauce and chili flakes for milder flavors. Store leftovers in an airtight container for up to three days or freeze for a month.
