Ingredients

For the Marinade
  • ¼ cup dark brown sugar Adds deep, molasses-like sweetness.
  • ¼ cup soy sauce Essential for authentic Asian flavor; can use gluten-free tamari.
  • 3 tablespoons fresh lime juice From 2 to 3 limes; brings zesty brightness.
  • 1½ tablespoons vegetable oil Ensures moisture and assists in grilling.
  • ½ teaspoon sesame oil Provides a nutty aroma.
  • ¾ teaspoon Garam Masala A warm spice blend; curry powder can be used as a substitute.
  • 3 cloves garlic Minced for aromatic depth.
  • 1½ teaspoons fresh grated ginger Adds a peppery, fragrant warmth.
  • ½ teaspoon cayenne pepper Adjust to taste for heat.
For the Chicken
  • 8 pieces boneless, skinless chicken thighs Chosen for their juicy, tender meat.
  • 2 pieces scallions Thinly sliced for garnish.

Method

Preparation
  1. In a medium bowl, mix together all of the ingredients except for the chicken and scallions.
  2. Set aside ¼ cup of the marinade, covering it for later use to create a sauce.
  3. Place the remaining marinade in a zip-lock freezer bag with the chicken thighs, ensuring they are evenly coated.
  4. Refrigerate the bag for 3 to 4 hours to marinate.
Grilling
  1. Preheat your grill to high heat.
  2. Grease the grill grates with vegetable oil to prevent sticking.
  3. Place the marinated chicken on the grill, cover, and cook for 5 to 6 minutes on each side.
  4. Once cooked through, transfer to a serving platter and drizzle with the reserved marinade.
  5. Top with sliced scallions.

Notes

For even more flavor, consider marinating the chicken overnight. If grilling isn't an option, bake in the oven at 400°F (200°C) for about 25 minutes. Adjust cayenne pepper to taste.
