Method

Season and Sear the Meat
  1. Generously season the chuck roast with kosher salt and black pepper on all sides.
  2. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  3. Working in batches, carefully add the beef chunks and sear them until browned on all sides.
  4. Remove the pot from heat and set the seared beef aside.
Prepare the Chile Mixture
  1. In a medium pot, combine the guajillo chiles, ancho chiles, árbol chiles, Roma tomatoes, yellow onion, cinnamon stick, bay leaves, and whole black peppercorns.
  2. Cover everything with water and bring it to a boil over high heat.
  3. Reduce the heat, cover, and let it simmer for 10 minutes.
Blend the Sauce
  1. Using a slotted spoon, transfer the softened chiles and their partners to a large blender.
  2. Add 1 cup of the chile-soaked cooking water, beef broth, white vinegar, garlic, ground cumin, oregano, and ground cloves.
  3. Blend on high for a few minutes until the sauce reaches a smooth consistency.
Combine and Simmer
  1. Strain the blended sauce through a fine mesh strainer back into the pot containing the seared meat.
  2. Stir the meat and sauce together, bringing the mixture to a boil over high heat.
  3. Reduce the heat to low, cover, and allow it to simmer for 3 to 3.5 hours.
Shred and Serve
  1. Transfer the meat to a large bowl and shred it gently with two forks.
  2. Return the shredded meat to the consomé, and now you have a delicious stew ready to serve!

Notes

For added depth, consider letting the birria sit overnight in the fridge before serving to enhance the flavors. If you prefer a thicker broth, simmer the consomé uncovered for the last 30 minutes. Keep extra chopped onions and cilantro available for topping your tacos, or serve alongside fresh lime wedges for a zesty kick.
