Method
Preparation
- Preheat your oven to 375°F (190°C).
- Rinse 6 cups of blueberries under cool water and place them in a large mixing bowl.
- Sprinkle 1/3 cup sugar, 1/3 cup brown sugar, 2 1/2 tablespoons lemon juice, 1 tablespoon corn starch, and 1/2 teaspoon cinnamon over the blueberries. Stir gently to combine and let sit for about 5 minutes.
- Pour the blueberry mixture into an oval 2.5 to 3-quart baking dish.
Making the Topping
- In a separate mixing bowl, whisk together 1 1/2 cups all-purpose flour, 1/3 cup sugar, 1/3 cup brown sugar, 1 1/2 teaspoons baking powder, and 1/2 teaspoon salt.
- Using a pastry blender, cut in 1 stick of cold butter until the mixture resembles coarse crumbs.
- Pour in 1/3 cup boiling water and stir until just combined.
Assembly and Baking
- Spoon the flour mixture over the blueberries, covering them completely.
- In a small bowl, mix 1 teaspoon cinnamon and 2 tablespoons sugar together. Sprinkle this mixture over the cobbler topping.
- Bake uncovered for 40 to 45 minutes, or until the topping is golden brown.
- Let the cobbler sit for about 10 minutes before serving.
- Serve warm, ideally with a scoop of vanilla ice cream.
Notes
For the best flavor, choose fresh blueberries when they are in season. If fresh blueberries aren’t available, frozen ones can work; just adjust baking time.
