Ingredients

Main ingredients
  • 5-6 pieces bone marrow short bones These delicious bones yield a luscious, creamy marrow.
  • 6 oz unsalted butter Room temperature for easy mixing.
  • 2 tbsp chives Finely chopped for flavor.
  • 1 tsp honey To add a hint of sweetness.
  • 1.5 tsp tamari A gluten-free soy sauce alternative.
  • to taste salt and pepper Essential seasonings.
  • to taste garlic cloves Optional, for serving with bread.
  • 1 loaf Ciabatta (or any bread of choice) For serving.

Method

Preparation
  1. Preheat your oven to 425°F (220°C). Place the bone marrow short bones on a baking sheet and roast them for 15-20 minutes.
  2. Once roasted, take the bones out of the oven and allow them to cool slightly. Use a small spoon to scoop out the marrow into a bowl.
  3. In your food processor, combine the roasted marrow, room temperature butter, chopped chives, tamari, salt, pepper, and honey. Process until smooth and creamy.
  4. Take a paper cup and poke a hole through the bottom. Pass the wick through the hole to form the base of your butter candle.
  5. Fill the prepared cup with the smooth marrow butter and place it in the freezer for at least 15-20 minutes to firm up.
  6. After it’s set, remove the butter candle from the cup and serve on a platter alongside toasted bread.
