Method

Preparation
  1. Place the garlic cloves, thyme, basil, kosher salt, and chili flakes into a mortar and pestle and grind together.
  2. Slowly drizzle in the olive oil and continue grinding until you have a smooth and aromatic marinade.
  3. In a large mixing bowl, add the marinated chicken thighs and coat each piece in the marinade.
Cooking
  1. Preheat your grill to medium-high temperature.
  2. Place the marinated chicken thighs on the grill and cook for 10 to 14 minutes, turning several times.
  3. The chicken is ready when it reaches an internal temperature of 165°F (74°C) or when the thickest thigh is cut open to check for doneness.
  4. Let the chicken rest briefly before slicing into bite-sized pieces.
Serving
  1. Arrange the sliced chicken on a grazing board and serve with lemon wedges, a sprinkle of kosher salt, and optional dipping sauces.

Notes

For best flavors, consider marinating the chicken overnight. If grilling is not an option, use a large skillet over medium-high heat for cooking. A splash of balsamic vinegar can elevate the marinade's sweetness and acidity.
