Method

Make the Avocado-Tomato Salsa
  1. In a medium bowl, combine the diced avocado, tomatoes, shallot, garlic, jalapeño, lime juice, salt, cumin, and cilantro. Gently mix to combine and set aside.
Scramble the Eggs
  1. In another medium bowl, whisk the eggs with smoked paprika and salt.
  2. Heat a large nonstick pan over medium-high heat, add the sausage, and cook until browned, about 4-5 minutes.
  3. Transfer the cooked sausage to a plate, leaving drippings in the pan, and reduce heat to low.
  4. Add whisked eggs to the pan and scramble until just cooked, then add to the plate with the sausage.
  5. Clean the pan for later use.
Assemble the Burritos
  1. Lay out flour tortillas and spoon about ¼ cup of the salsa on each, followed by sausage, scrambled eggs, and cheese.
  2. Fold in the sides and roll tightly to enclose fillings.
Cook the Burritos
  1. Lightly coat the pan with vegetable oil and place tortillas seam side down.
  2. Cook covered for about 3 minutes until golden brown, then flip and cook the other side until crispy.

Notes

Tips to enhance flavor include leaving some seeds in the jalapeño for extra heat or adding more veggies like bell peppers. Cheese varieties can be experimented with for varied flavors.
