Ingredients

Main Ingredients
  • 2 lbs ground beef (lean) Juicy and tender, the primary protein.
  • 1 medium onion (diced) Adds depth of flavor.
  • 1/2 tsp garlic powder Infuses a rich, savory essence.
  • 1/2 tsp salt Enhances the flavors.
  • 1 cup red enchilada sauce Rich and tangy sauce.
  • 4.5 oz diced green chiles (1 small can) Adds a little spice and kick.
  • 1/2 cup sour cream Adds a delightful tang.
  • 1 cup cheddar cheese For that melty, gooey cheese factor.
  • 2.5 oz sliced black olives (drained, 1 small can) Adds texture and color.
  • 3 pieces green onions (diced) Provides a crisp contrast.

Method

Preparation
  1. Heat a large skillet over medium heat. Add the ground beef and diced onion. Cook until the beef is browned and no longer pink and the onions are translucent, about 5-7 minutes. Drain any excess grease or moisture.
  2. Return the skillet to heat. Add garlic powder, salt, enchilada sauce, diced green chiles, and sour cream. Stir well to combine.
  3. Bring the mixture to a gentle boil, then reduce the heat and simmer for about 4-6 minutes until the sauce thickens.
  4. Gradually stir in half of the cheddar cheese until melted, then sprinkle the remaining cheese on top.
  5. Cover the skillet with a lid and let it sit for 2-3 minutes to melt the cheese.
  6. Remove from heat and top with black olives and green onions before serving.

Notes

For more flavor, consider browning the beef with taco seasoning. Add jalapeños or cayenne pepper for spice. Swap sour cream for Greek yogurt for a healthier twist.
