Method
Preparation
- Line a baking sheet with aluminum foil for easy cleanup. Dust a clean surface with flour and lay the thawed puff pastry over it.
- Roll the pastry out to about ⅛-in (3-mm) thick and cut out circles about 2 inches (5 cm) larger than your soup bowls.
- Place the rounds on the prepared baking sheet and refrigerate.
Filling
- Preheat your oven to 425°F (220°C) and position a rack in the center.
- In a large sauté pan, melt the butter over medium heat. Add the diced onion, garlic, celery, pearl onions, and carrot rounds.
- Sauté everything while stirring occasionally for about 8 to 10 minutes until the carrots are just cooked.
- Sprinkle in the flour and cook while stirring for about 2 minutes.
- Pour in the chicken broth, cognac (if using), salt, and white pepper. Stir continuously until thickened.
- Off the heat, stir in the heavy cream, fresh thyme, shredded chicken, and frozen peas.
- Taste and adjust seasoning if necessary.
Assembly and Baking
- Ladle the filling into your soup bowls, filling about three-quarters full.
- Prepare the egg wash by beating the egg with 1 tablespoon of water.
- Brush the outer edges of each bowl with egg wash, then place the dough rounds on top, pressing down to adhere.
- Transfer the bowls onto the foil-lined baking sheet, brushing the tops with egg wash, and make a small slit in the top of each pie.
- Bake for 20 to 25 minutes or until the pastry is golden brown.
- Let cool for 10 minutes before serving.
Notes
Consider adding a splash of lemon juice for brightness or crushed red pepper flakes for heat. For a heartier version, include more vegetables. Cover with foil if the crust browns too quickly.
