Preparation
- Preheat your oven to 325°F (165°C) and place an oven rack in the middle position.
- In a large sauté pan, heat the olive oil over medium heat. Add the finely chopped onions, bell peppers, and garlic. Cook for about 10 to 15 minutes, stirring occasionally, until they soften and begin to brown.
- Add the ground chicken, paprika, ancho chili powder, cumin, oregano, cayenne (if using), and salt to the pan. Increase the heat to high, and using a wooden spoon, break the chicken into small clumps. Cook for around 5 minutes until the chicken is partially cooked.
- Stir in the can of tomato sauce. Lower the heat to a simmer and continue cooking for another 12 to 15 minutes. Stir occasionally while breaking the chicken into smaller pieces. Once fully cooked, sprinkle with fresh chopped cilantro and taste for seasoning, adjusting as necessary.
- While the filling simmers, remove the taco shells from the package. Lay them sideways on a baking sheet and carefully pull the stack apart, overlapping the edges slightly. Bake in the oven for 6 to 7 minutes until they are crisp.
- Fill each taco shell generously with the chicken mixture and serve immediately with your choice of toppings.
Notes
For extra flavor, consider marinating the ground chicken in the spices for an hour before cooking. Fresh herbs are key! Don’t skip on the cilantro, as it really brightens the dish. If you prefer a smoky undertone, try adding chipotle powder instead of cayenne for a different flavor profile.
