Preparation
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Making the Batter
- In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well before adding the next, and then mix in the vanilla.
- Mix in half of the dry ingredients, then the milk and sour cream, followed by the rest of the dry ingredients. Be careful not to overmix.
- Fold in the coarsely crushed chocolate sandwich cookies.
Baking
- Divide the batter into the prepared liners, filling each about 3 to 4 tablespoons.
- Bake for 18-20 minutes until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely in the pan before removing.
Making the Frosting
- In another bowl, beat the soft butter until creamy, then gradually add the sifted confectioners' sugar, mixing until fluffy.
- Mix in the remaining vanilla extract and heavy cream or milk.
- Stir in the finely crushed chocolate sandwich cookies.
Frosting the Cupcakes
- Frost each cooled cupcake using a piping tip or offset spatula.
Notes
For best results, use room temperature ingredients. Garnish with additional crushed cookies for extra crunch. Experiment with flavored extracts for variations.
