Method

Preparation
  1. Preheat your oven to 200°C (390°F), or 180°C for fan-forced settings.
  2. Spread the panko breadcrumbs on a baking tray and lightly spray them with oil. Bake for 3 to 5 minutes until golden brown.
  3. In a separate bowl, combine egg, mayonnaise, dijon mustard, flour, salt, and pepper. Whisk until creamy.
  4. Toss the chicken pieces in the batter until well-coated.
Coating
  1. Use tongs to lift each piece of chicken into the panko, pressing down gently to ensure the crumbs stick.
  2. Transfer coated chicken to the prepared baking tray.
  3. Lightly spray chicken with oil and sprinkle with salt, if desired.
Baking
  1. Bake chicken in the preheated oven for 15 to 20 minutes, checking for doneness.
Serving
  1. Serve hot with your favorite dipping sauce, like honey mustard, and garnish with fresh parsley if desired.

Notes

Double-coat chicken for extra crunch. Add cayenne pepper for heat. Use a thermometer to check chicken is cooked (75°C / 165°F). Leftovers keep in the fridge for up to 3 days or can be frozen.
