Method

Preparation
  1. Start by turning your grill or broiler on high and adjust the shelf so that it is about 20cm from the heat source.
  2. Place the unpeeled potatoes in the microwave and cook on high for three minutes. Turn them over and cook for an additional two minutes or until soft.
  3. In a small bowl, combine mayonnaise and grated parmesan cheese until creamy.
  4. Lay the chicken in a large oven-proof frying pan. Spread the mayonnaise mixture evenly over each chicken breast.
  5. Generously sprinkle panko breadcrumbs over each piece of chicken, pressing gently to adhere.
Cooking
  1. Place the pan under the grill/broiler for about eight minutes, checking at six minutes and rotating if necessary.
  2. Once the chicken is cooking, carefully remove the potatoes, cut them in half, and scoop out the flesh into a mixing bowl. Add milk, butter, salt, and pepper, then mash until creamy.
Assembly
  1. Use a potato peeler to create cucumber ribbons and cut the cherry tomatoes in half. Assemble on a plate, drizzle with lemon juice, olive oil, and season.
  2. On each plate, add mashed potatoes, top with crumbed chicken, and serve salad on the side.

Notes

For crispier chicken, let it sit in the mayonnaise mixture before adding breadcrumbs. Consider adding garlic powder or herbs for extra flavor.
