Mix-ins
  • ½ cup chopped pecans providing a delightful crunch
  • ¼ cup vegan chocolate chips for molten pockets of chocolatey goodness

Method

Preparation
  1. Preheat your oven to 325°F (160°C) and prepare an 8-inch square baking pan by lining it with parchment paper or greasing it with foil.
  2. In a medium bowl, whisk together the almond butter, coconut sugar, maple syrup, and melted coconut oil until it resembles grainy caramel.
  3. Gradually add the cocoa powder in ¼ cup increments, whisking until shiny and smooth, then mix in the vanilla extract and salt.
  4. Add the flax eggs and whisk until thoroughly combined. Incorporate the oat flour in thirds, folding until fully integrated.
  5. Fold in the chopped pecans and vegan chocolate chips.
  6. Pour the brownie batter into the prepared pan, smoothing it out evenly. Sprinkle the remaining pecans on top and press slightly into the batter.
Baking
  1. Bake for 28-32 minutes or until set. Allow brownies to cool for 1 hour before slicing.
Serving
  1. Cut into 16 squares. For decoration, melt additional chocolate chips with coconut oil and pipe over the brownies.

Notes

Flax eggs must sit for 10 minutes to thicken. Ovens vary, so check the brownies towards the end of baking. Substitute pecans with your favorite nuts if desired.
