  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 box Beef Rice A Roni (6.8 ounces) Use only the rice and pasta components; set seasoning packet aside.
  • 1 unit egg Acts as a binder for the meat mixture.
  • 2.25 cups water Used to cook the rice mixture.

Method

Preparation
  1. Start by grabbing 1 pound of ground beef and tossing it into a medium-sized mixing bowl.
  2. Pour 1 box of Beef Rice A Roni into the bowl, using only the rice and pasta components. Set the seasoning packet aside.
  3. Add the egg to the bowl and mix everything together with your hands until thoroughly combined.
  4. Shape the mixture into 25 golf ball-sized meatballs.
Cooking
  1. Heat a large, deep skillet over medium-high heat and brown the meatballs on both sides.
  2. In a liquid measuring cup, combine 2 1/4 cups of water with the seasoning packet from the Rice A Roni box.
  3. Pour the seasoned liquid over the browned meatballs and reduce the heat to medium-low, allowing it to simmer for 30-40 minutes.
  4. Serve the meatballs hot.

Notes

Make the meatball mixture ahead of time and refrigerate for up to 24 hours before cooking. You can also add chopped veggies like bell peppers or onions for extra flavor.
