  • 2 tablespoons olive oil Rich, golden olive oil
  • 4-5 cloves garlic (sliced thinly) For an aromatic punch
  • 2 teaspoons fresh ginger (finely diced and peeled)
  • 1 cup sweet onion (finely diced) For subtle sweetness
  • ½ cup crunchy celery (finely diced) For added texture
  • Kosher salt to taste Enhancing the flavors
  • Black pepper to taste Adding depth
Broths and Liquids
  • 2 cups low-sodium chicken broth For a savory base
  • 1 cup chicken bone broth Rich in nutrients
  • 1 cup water To balance the flavors
  • 1 teaspoon chicken base or bouillon Optional, but adds extra flavor
Finishing Touches
  • 1 cup baby spinach Packed in for vibrant color and nutrients
  • 1 tablespoon fresh squeezed lemon juice For brightness
  • 1 small shallot Pan-fried until crispy for texture
  • 2 tablespoons Italian parsley (roughly chopped) For freshness
  • 1 teaspoon chili oil Optional, for a spicy kick

Method

Preparation
  1. Begin by boiling a pot of seasoned water. Add in your pasta and cook according to the package instructions, aiming for al dente for the best result. Once cooked, drain the pasta using a colander and set it aside. To prevent sticking, drizzle the pasta lightly with olive oil.
  2. In a large sauté pan, heat the olive oil over medium-high heat. Add the diced onion, celery, sliced garlic, and ginger to the pan. Sauté until the vegetables become translucent and aromatic. Season with a pinch of kosher salt and black pepper to enhance the flavors.
Cooking
  1. Once the veggies have softened, pour in the chicken bone broth, low-sodium chicken broth, and water. If you're using chicken bouillon for extra flavor, add that as well. Stir everything well and let it simmer over low heat for 15-20 minutes. Taste the broth and adjust seasoning as necessary.
  2. After simmering, add the baby spinach to the pot. Allow it to wilt before squeezing in some fresh lemon juice. This little step will brighten up the broth and add some essential acidity to the dish.
Crisping Shallots
  1. In a separate nonstick skillet, add a touch of vegetable oil and fry the shallot slices until they turn crispy and golden. Once they are done, place them on a paper towel to absorb any excess oil and set aside.
Assembly
  1. To serve, add a portion of the cooked pasta to the bottom of a soup bowl. Carefully ladle in the hot soup, ensuring each bowl gets plenty of veggies and wilted spinach. Finish with a sprinkle of fresh parsley, crispy shallots on top, and a drizzle of chili oil if you like a bit of spice.

Notes

Use Fresh Ingredients: For the best flavor, using fresh garlic, ginger, and vegetables will elevate the taste of your soup significantly. Chill for Later: If you want to make this ahead of time, prepare the soup without the pasta and store it separately. Add the pasta just before serving to keep it from becoming mushy.
