Ingredients

For the Marinade
  • ⅔ cup olive oil Rich and luscious, it adds a wonderful depth and moisture.
  • ⅔ cup less sodium soy sauce Brings umami and saltiness without overwhelming the dish.
  • 1 each lemon (juiced) Enhances the chicken’s flavor with zesty citrus notes.
  • 1 tablespoon brown sugar Adds a hint of sweetness that balances the savory elements.
  • 2 tablespoons spicy brown mustard Introduces a slight kick and tangy bite.
  • 1 teaspoon fresh ground black pepper Adds just the right amount of spiciness.
  • 1 teaspoon garlic powder Provides aromatic and robust flavors.
  • ½ teaspoon liquid smoke flavoring Imparts a subtle smokiness.
  • 1 teaspoon chili garlic sauce (optional) For those who enjoy an extra layer of heat.
For the Chicken
  • 2 to 3 pounds assorted chicken pieces Use a variety of cuts—thighs, breasts, wings.

Method

Preparation
  1. In a small mixing bowl, combine all marinade ingredients and whisk until well blended.
  2. Place chicken pieces into a gallon-sized plastic storage bag, splitting between two bags if necessary.
  3. Pour marinade into the bag with chicken, seal tightly, and shake to coat evenly.
  4. Refrigerate the chicken for at least one hour, or up to eight hours.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Place marinated chicken on the grill grate, searing for about 5-7 minutes on each side.
  3. Move chicken to indirect heat and continue grilling until the internal temperature reaches 165 degrees F.

Notes

Use fresh ingredients for enhanced flavor. Marinating overnight results in richer taste. Add wood chips for smokiness while grilling.
