Chicken and Marinade
  • 1.5 to 1.75 lbs boneless skinless chicken breasts (or chicken tenderloins) Juicy and tender, these are the perfect protein to soak up the marinade.
  • 1/4 cup extra-virgin olive oil Adds richness to the marinade and helps keep the chicken moist.
  • 1 teaspoon salt Enhances flavors and brings out the best in your ingredients.
  • 1 teaspoon sugar A subtle sweetness balances the spices.
  • 3 cloves garlic, minced Provides a robust aroma that complements the spices beautifully.
  • 2 teaspoons paprika Gives the chicken a vibrant color and smoky flavor.
  • 1 teaspoon ground cumin Adds a warm, earthy depth to the dish.
  • 1/2 teaspoon ground coriander Offers a citrusy note that brightens the marinade.
  • 1/4 teaspoon ground ginger Infuses a gentle warmth and complexity.
  • 1/4 teaspoon ground turmeric Adds color and a mild earthiness.
  • 1/4 teaspoon ground cinnamon Brings a hint of sweetness and warmth.
  • 1/8 teaspoon cayenne pepper Adds a touch of heat to elevate the flavors.

Method

Preparation
  1. Pound the Chicken: Place chicken breasts between two pieces of wax paper. Using a meat mallet, pound to an even thickness of ½ inch.
  2. Prepare the Marinade: In a bowl, combine olive oil, salt, sugar, minced garlic, paprika, cumin, coriander, ginger, turmeric, cinnamon, and cayenne pepper. Whisk until fully blended.
  3. Marinate the Chicken: Place pounded chicken in a zip-lock bag. Pour in the marinade, seal, and gently massage to coat well.
  4. Refrigerate: Place the sealed bag in a bowl and refrigerate for at least 5 hours, or overnight for best results.
  5. Preheat the Grill: Clean your grill and preheat it to high heat.
Cooking
  1. Grill the Chicken: Remove chicken from the marinade, place it on the grill, and spoon some excess marinade over the top. Grill for 2-3 minutes on each side until juicy and tender.

Notes

Marination Time: For maximum flavor, marinate overnight. Use a meat thermometer; the internal temperature should reach 165°F for safety.
