Ingredients

Main ingredients
  • 8 pieces chicken thighs (skinless and boneless) Juicy and flavorful, providing the perfect base for your dish.
  • 2 tbsp cornflour (cornstarch) Helps to lend a crispy texture to the chicken.
  • 1/2 tsp salt To season the chicken.
  • 1/2 tsp pepper To enhance the natural flavors.
  • 2 tbsp vegetable oil For frying.
  • 1 tbsp unsalted butter For richness in the sauce.
  • 4 cloves minced garlic Adds warmth and depth to the sauce.
  • 110 g honey Adds characteristic sweetness.
  • 80 ml chicken stock Enhances the sauce's depth.
  • 1 tbsp rice vinegar Adds a touch of acidity.
  • 1 tbsp light soy sauce Provides an umami kick.
  • 1 tbsp finely chopped fresh parsley Brightens the dish.
  • 1/2 tsp chilli flakes Offers a hint of heat.
  • Boiled rice To serve, providing a neutral base.

Method

Preparation
  1. In a bowl, combine the chicken thighs with the cornflour, salt, and pepper. Toss until fully coated.
  2. Place a large frying pan over high heat and add vegetable oil.
Cooking
  1. Once the oil is hot, add the chicken thighs to the pan. Cook until golden brown on one side, about 4-5 minutes. Flip and cook for another 2 minutes.
  2. Add the unsalted butter to the pan and allow it to melt. Then add minced garlic and stir to combine.
  3. In a separate bowl, whisk together honey, chicken stock, rice vinegar, and light soy sauce.
  4. Pour the sauce into the pan with the chicken. Increase the heat to bring to a boil, then reduce and let simmer for 4-5 minutes.
Finishing
  1. Once done, sprinkle chopped parsley and chilli flakes over the chicken. Serve hot over boiled rice.

Notes

For marination, consider letting chicken sit in the sauce for a couple of hours or overnight for more flavor. To adjust sweetness, reduce honey or increase vinegar. For meal prep, the sauce can be made ahead.
