Method

Prepare the Pastry
  1. In a food processor, combine the plain flour, unsalted butter, turmeric, garam masala, and salt. Pulse until the mixture resembles fine breadcrumbs.
  2. If making by hand, rub the butter into the flour quickly to avoid melting. Keep the mixture cool.
Form the Dough
  1. Gradually add the ice-cold water, mixing with your hands until the dough holds together without being sticky.
  2. Wrap it in plastic wrap and refrigerate while you prepare the filling.
Cook the Filling
  1. In a large pan, heat the vegetable oil over medium heat. Add the finely chopped onions and red pepper, sautéing for about 5 minutes until softened.
  2. Incorporate the spring onions.
Add the Meat and Spices
  1. Stir in the beef mince, garlic puree, chilli puree, paprika, additional garam masala, turmeric, and salt. Cook until browned.
Simmer to Perfection
  1. Add thyme and stock to the pan. Cover and let simmer on low heat for about 15 minutes.
Preheat the Oven
  1. Set your oven to 180°C fan / 200°C / 400°F / Gas Mark 6.
Roll Out the Pastry
  1. Flour your working surface and roll out the chilled pastry thinly.
  2. Use a saucer or small plate (about 17 cm in diameter) as a template to cut out circles.
Fill the Patties
  1. Place the pastry circles onto small squares of parchment paper. Spoon 2-3 tablespoons of the beef mixture onto the center of each.
  2. Wet the edges of the pastry using your finger.
Seal the Patties
  1. Fold the pastry over the filling, pressing the edges together, and use a fork to crimp the seam.
Glaze and Bake
  1. In a small bowl, whisk together the egg and water. Brush over the patties.
  2. Transfer the patties onto a tray and bake for 20-25 minutes until golden brown.
Serve and Enjoy
  1. Once baked, let them cool for a moment, then serve hot and fresh.

Notes

For an even flakier pastry, ensure your butter remains cold. You can also experiment with different minced meat for variations. Unbaked patties can be frozen for up to 2 months.
