Preparation
- In a medium-sized bowl, combine the cut chicken breast pieces with olive oil, whole milk yogurt, mayonnaise, lemon juice, lemon zest, minced garlic, salt, paprika, garlic powder, onion powder, cumin, black pepper, and cinnamon. Mix well until the chicken is fully coated.
- Cover with plastic wrap and allow it to marinate for 30 minutes to an hour—overnight is even better for maximum flavor.
Cooking
- Preheat your oven to 450°F (232°C).
- If using metal skewers, thread the marinated chicken pieces onto them. If using wooden skewers, soak them in water for 15 minutes to prevent burning before threading.
- Line a large baking sheet with foil and place a metal wire rack on top.
- Arrange the chicken skewers on the wire rack and bake for 13 minutes. Check for doneness—the chicken should be white on the inside.
- For a slight char, broil for an additional 5 minutes.
- In the last moments before broiling, mix the melted butter with the parsley flakes and brush the skewers with this mixture.
Notes
For the best flavor, marinate the chicken overnight. If you don’t have skewers, you can also bake the chicken pieces directly on the wire rack. Storage: Place leftovers in an airtight container in the refrigerator for up to 3 days.
