Method

Preparation
  1. Begin by cooking the pasta according to package directions. Once done, drain and let it cool for 5 minutes.
  2. While the pasta cools, prepare the kale pesto in a food processor by combining the chopped kale, basil, and walnuts. Pulse until finely chopped.
  3. Scrape down the sides and add extra-virgin olive oil, parmesan cheese, minced garlic, lemon juice, and salt. Process until smoothly blended.
Combine and Serve
  1. In a large bowl, add the cooled pasta, then stir in cherry tomatoes, mozzarella, and additional basil. Pour the pesto over and toss to coat.
  2. For a final touch, sprinkle in pine nuts or walnuts. Cover and refrigerate. This salad tastes best after a day or two.

Notes

Toast walnuts or pine nuts in a dry skillet for added flavor. Adjust pesto texture with olive oil and garlic to preference. For a heartier meal, consider adding cooked chicken or chickpeas.
