Ingredients

Main ingredients
  • 2 pounds boneless skinless chicken breasts (4 pieces)
  • 2 tsp Herbs de Provence
  • 1 clove garlic (minced)
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • 1 tbsp lemon zest
  • 1/4 cup freshly squeezed lemon juice (from 1 lemon)
  • 2 tsp sea salt (or to taste)
  • 1/2 tsp freshly ground black pepper
  • 1.5 pounds asparagus (1 bunch)
  • 1 lemon cut into thin slices

Method

Preparation
  1. Preheat the oven to 400ºF and line a baking sheet with parchment paper.
  2. Place the chicken breasts evenly on the baking sheet and set aside.
  3. In a small bowl, whisk together the Herb de Provence, minced garlic, olive oil, honey or maple syrup, lemon zest, lemon juice, sea salt, and pepper until well combined.
  4. Pour half of this mixture over the chicken breasts, ensuring they're well coated. Place the pan in the oven and cook until the chicken is nearly done, about 20 minutes.
  5. While the chicken is cooking, toss the remaining Herbs de Provence mixture with the asparagus. Set it aside for later.
Cooking
  1. When the chicken is almost finished, remove it from the oven and switch the oven to the broil setting.
  2. Arrange the asparagus around the edges of the chicken on the pan. Pour any remaining sauce from the asparagus over the pan and place a few lemon slices in and around the chicken and asparagus.
  3. Broil on a low setting until the asparagus is crisp-tender and the chicken is golden brown and no longer pink in the center, about 10 minutes.
  4. Serve immediately and enjoy the vibrant flavors of this delightful dish!

Notes

Don’t skip the marination step; even a short time allows the flavors to infuse the chicken. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165ºF for perfect doneness. For an extra layer of flavor, consider adding cherry tomatoes or bell peppers to the pan along with the asparagus. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
