Method

Preparation
  1. Preheat oil in a nonstick pan over medium heat. Add diced potatoes and cook until browned and crispy. Cover while cooking.
  2. Transfer the cooked potatoes to a plate lined with paper towels to drain.
Cooking
  1. In a separate skillet, heat to medium-high and add ground beef. Season with salt, pepper, garlic powder, cumin, and oregano. Cook until browned for 8-10 minutes.
  2. Add minced garlic and diced onion to the skillet. Cook for an additional 3-4 minutes until onions are soft.
  3. Blend chopped tomatoes and serrano chiles with 1/4 cup water until smooth. Pour into the skillet with beef.
  4. Allow the mixture to boil, then fold in the crispy potatoes. Simmer for 7-10 minutes until sauce thickens.
Finishing Touches
  1. Remove from heat. Cool completely if using as a filling, or adjust with broth for a soupier version.

Notes

For extra crispy potatoes, avoid crowding in the pan. Consider adding a bay leaf for flavor. Finish with fresh herbs if desired. Leftovers can be stored in an airtight container for up to 3 days.
