Ingredients

For the Marinade
  • 2 tbsp chipotle paste Smoky and spicy, infuses the dish with warmth.
  • 2 tbsp runny honey Adds a touch of sweetness.
  • 1 1/2 tsp tomato puree For depth and richness.
  • 1 tsp salt Enhances the overall flavor.
  • 2 large cloves garlic Aromatic and robust.
Main Ingredients
  • 4 pieces skinless boneless chicken thighs Juicy and tender.
  • 200 g fresh pineapple chunks Sweet and succulent.
  • 1 small shallot Aromatic and slightly sweet.
  • 1 piece lime Juiced for brightness, plus wedges for serving.
  • 1 handful fresh coriander Roughly chopped, enhances flavor.
  • 1 piece ripe avocado Cubed, offers creamy texture.
  • 8 small corn or flour tortillas Perfect carriers for fillings.

Method

Preparation
  1. In a medium bowl, whisk together chipotle paste, runny honey, tomato puree, salt, and crushed garlic to create the marinade.
Marinate the Chicken
  1. Roughly chop chicken thighs into bite-sized pieces. Toss in the marinade until well coated, then let sit to absorb flavors while preheating the oven.
Cooking
  1. Preheat the oven to 200 degrees Celsius (about 400 degrees Fahrenheit).
  2. Spread the marinated chicken on a baking tray and sprinkle fresh pineapple chunks on top. Roast for about 30 minutes until cooked through and golden.
Prepare the Toppings
  1. Finely chop the shallot and cube the avocado. If using corn tortillas, lightly char each side in a hot frying pan for 1-2 minutes.
Combine and Serve
  1. Remove the chicken and pineapple from the oven. Squeeze lime juice over the mixture, toss with chopped shallot, and serve with coriander, cubed avocado, and warm tortillas.

Notes

For a deeper flavor, marinate the chicken for a few hours or overnight. Fresh pineapple is recommended, but canned can be used if drained well. Consider adding cheese or spicy salsa as garnishes.
