Ingredients

Main Ingredients
  • 1/3 cup sun-dried tomatoes (julienned, drained of most of oil) Chopped into smaller pieces for even flavor distribution.
  • 2 tablespoons olive oil (from the sun-dried tomato jar) To infuse flavor into the dish.
  • 1 lb chicken thighs (boneless, skinless, sliced into thinner strips) Juicy and tender; can substitute with chicken breasts.
  • 1/4 teaspoon salt Season to taste.
  • 1/2 teaspoon paprika Adjust from 1/4 to 1/2 teaspoon based on taste preference.
  • 1 lb asparagus (ends trimmed, cut in half) Adds a fresh, crispy bite.

Method

Preparation
  1. Begin by chopping the drained sun-dried tomatoes into smaller, bite-sized pieces.
  2. In a large skillet over medium heat, warm half the amount of chopped sun-dried tomatoes along with 2 tablespoons of the olive oil from the jar.
Cooking the Chicken
  1. Add the sliced boneless, skinless chicken thighs to the skillet. Cook until golden brown and cooked through.
  2. Season the chicken with 1/4 teaspoon of salt and sprinkle with paprika.
  3. Remove the chicken from the skillet once cooked, leaving the flavored oil behind.
Cooking the Asparagus
  1. Add the asparagus and the remaining half of the sun-dried tomatoes to the skillet.
  2. If the skillet seems dry, drizzle in an extra tablespoon of olive oil.
  3. Generously season the asparagus with salt and cook for about 5 minutes until tender yet still crisp.
  4. Remove from heat, cover with a lid, and let the asparagus finish cooking to your preferred crispness.
Combining and Serving
  1. Return the cooked chicken to the skillet, gently reheat, and serve warm.

Notes

For added flavor depth, marinate the chicken in the olive oil and spices for an hour before cooking. Serve with a squeeze of fresh lemon juice to brighten flavors.
