Preparation
- Spray 4 (6-ounce) ramekins with nonstick cooking spray and dust them lightly with cocoa powder.
- Preheat your oven to 425°F (218°C).
- Coarsely chop the chocolate and place it in a medium heat-proof bowl with the unsalted butter. Microwave on high in 10-second increments, stirring after each until smooth.
- In a small bowl, whisk together the flour, confectioners' sugar, and salt. In another bowl, whisk the eggs and egg yolks until fully combined. Combine both mixtures and stir gently until you achieve a slightly thick batter.
- Spoon the chocolate batter evenly into each prepared ramekin and top each with 2 teaspoons of peanut butter, pressing it gently into the batter.
Baking
- Place the ramekins on a baking sheet and bake for 12-13 minutes until the sides are solid and the tops look slightly soft.
- Allow the cakes to cool for 1 minute before inverting them onto plates to release.
Serving
- Serve immediately topped with ice cream and drizzled with melted peanut butter and/or chocolate syrup.
Notes
Use high-quality chocolate for the best flavor. You can prepare the batter in advance and refrigerate it in the ramekins. Store leftovers in an airtight container for up to 3 days.
