Method
Preparation
- Preheat your oven to 180°C (350°F) or 160°C (320°F) for fan-forced. Line a 12-hole muffin pan with paper cupcake liners.
- In a small non-stick frying pan over low heat, cook the desiccated coconut for about 5 minutes until golden brown. Set aside to cool.
Making Cupcakes
- In a large mixing bowl, combine the unsalted butter and caster sugar. Beat until pale and creamy.
- Add the vanilla extract and room temperature egg, mixing briefly until well combined.
- Sift in the flour, baking powder, and a pinch of salt. Add the toasted coconut and coconut cream. Beat on low until a thick, creamy batter forms.
- Spoon the batter into the prepared cupcake liners, filling each about two-thirds full. Bake for approximately 18-20 minutes or until golden and a toothpick comes out clean.
- Allow the cupcakes to cool completely on a wire rack.
Making Buttercream
- In another mixing bowl, beat the 170 grams of butter on medium speed for 1-2 minutes until smooth.
- Add the vanilla extract and mix briefly, then gradually add in 125 grams of icing sugar on low speed, increasing to medium for about 30 seconds.
- Mix in the remaining 250 grams of icing sugar and 2 tablespoons of coconut cream until thick and creamy, adjusting thickness with extra coconut cream as needed.
- Stir by hand to eliminate air bubbles.
Decoration
- Transfer buttercream to a piping bag fitted with a large star tip. Frost the cooled cupcakes and sprinkle with coconut flakes.
Notes
For extra coconut flavor, add coconut extract to the batter or frosting. Ensure all ingredients are at room temperature. Toast coconut carefully to avoid burning.
