Ingredients
Method
Preparing the Marinade
- Puree the peeled garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and a pinch of black pepper in a blender.
Marinating the Chicken
- Place the chicken thighs in a large Ziploc bag and pour in the marinade.
- Seal the bag tightly and refrigerate for at least 8 hours, or up to 24 hours.
Creating the Sauce
- In another blender, combine all sauce ingredients except for the olive oil until smooth.
- Gradually drizzle in the olive oil to emulsify the sauce and refrigerate until ready to serve.
Grilling the Chicken
- Preheat your grill to medium-high heat (around 350°F).
- Remove the chicken from the marinade and grill for about 5-6 minutes on each side.
- Ensure the internal temperature reaches 165°F.
Oven Finishing Touches
- Preheat your oven to 500°F.
- Transfer the grilled chicken to a 13x9 inch roasting pan and add 1 cup of water.
- Bake uncovered for 30 minutes, then tent with foil and cook for an additional 15 minutes.
Notes
For a deeper flavor, consider marinating overnight. Adjust jalapeños for heat preference. Let chicken rest post-cooking for juiciness.
