Ingredients
Method
Cook the Pasta
- Bring 3 liters of water to a rolling boil and add 1 tablespoon of salt.
- Cook the spiral pasta according to the packet instructions, adding an extra minute for al dente texture.
- Drain the pasta in a colander and rinse it under cold water to stop the cooking process.
- Shake off excess water and let it cool and dry completely.
Make the Pesto
- In a tall jug, combine the basil leaves, toasted pinenuts, minced garlic, grated parmesan, salt, and black pepper.
- Blitz all ingredients together until a smooth consistency is achieved, aiming for a pesto with some small, visible green bits.
Toss Everything Together
- In a large mixing bowl, add the cooled pasta and scrape in the freshly made pesto.
- Incorporate the mayonnaise and toss well to ensure every spiral is coated.
- Gently fold in the halved bocconcini and cherry tomatoes.
- Finally, add the baby arugula leaves and toss gently just to combine.
Serve
- Transfer the pesto pasta salad into a serving bowl.
- Scatter small basil leaves over the top if desired.
- Serve immediately, or let it rest for a bit for the flavors to meld beautifully.
Notes
For a more intense flavor, let the pesto sit for at least 30 minutes before mixing with the pasta. Add grilled vegetables or chicken for extra protein. For a vegan version, omit parmesan and use nutritional yeast.
