Preparation
- Grind your pesto in a food processor or blender until smooth.
- Run the pesto through a cheesecloth or strainer to ensure a perfectly smooth consistency.
- Fill a flavor injector needle with the pesto, ensuring it is runny enough to flow without clogging.
- Insert the needle into the center of the burrata and fill until it resists or a bit of pesto oozes out.
- Use a sharp knife to poke a small hole in the cheese to insert more pesto with a baster or piping bag.
- Gently push more pesto into the burrata until it gives resistance and some pesto returns through the hole.
- Lightly wipe away excess pesto from the burrata using clean, wet hands.
- Place the burrata with the hole side down on a plate, and sprinkle with Celtic sea salt, fresh cracked pepper, and drizzle with olive oil.
Notes
For extra flavor, experiment with different types of pesto. Use fresh ingredients for the best taste. Pair well with crusty bread or grilled vegetables.
