Ingredients

For the Quesadilla
  • 2 pieces flour tortillas (medium or burrito-sized) Soft and fluffy, these tortillas hold the delicious filling perfectly.
  • 0.5 lb beef (ribeye or top round, thinly sliced or diced) Juicy and tender, the beef is the star of the dish.
  • 0.5 medium onion (chopped) Aromatic and sweet when cooked.
  • 0.5 pieces red pepper (diced) Crisp and vibrant, brings a hint of sweetness.
  • 0.5 pieces green pepper (diced) Earthy and refreshing.
  • 6 oz mushrooms (diced) Enhances the umami of the quesadilla.
  • 3 slices provolone cheese (sliced in half) Creamy and melty for that gooey texture.
  • 1 Tbsp light olive oil (divided) Adds richness and helps crisp everything up.
  • 1 clove garlic (minced) Imparts a fragrant burst of flavor.
  • 0.25 tsp sea salt Enhances all savory notes.
  • 0.125 tsp ground black pepper Adds a touch of warmth.
  • 2 tsp mayonnaise (optional) A creamy finishing touch.

Method

Cook the Beef
  1. In a large skillet, heat 2 teaspoons of olive oil over medium-high heat. Add the chopped beef, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove from the skillet and cover to keep warm.
Sauté the Vegetables
  1. In the same skillet, finely chop the onion and dice the mushrooms and peppers. If necessary, add another teaspoon of olive oil and sauté the vegetables until tender, about 4-5 minutes.
Combine Ingredients
  1. Add the beef back into the skillet with the minced garlic. Stir and cook for another 1-2 minutes until re-heated and fragrant.
Prepare the Tortillas
  1. Spread mayonnaise on one side of each tortilla. Divide the filling mixture between the tortillas and top with the sliced provolone cheese.
Cook the Quesadilla
  1. Heat a skillet over medium heat and drizzle with olive oil. Place the filled tortilla in the skillet and sauté until the cheese melts and the tortilla is golden, about 3-4 minutes. Flip and cook for another 2-3 minutes.
Slice and Serve
  1. Remove the quesadilla from the skillet and slice into wedges. Serve immediately with your favorite dipping sauce.

Notes

You can customize the beef with chicken, turkey, or a vegetarian option. Substitute the cheese for mozzarella or pepper jack for variations. Store leftovers in an airtight container for up to three days, or freeze for later use.
