Method
Preparation
- Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin pan with paper liners.
- In a medium bowl, whisk together the flour, finely ground pistachios, baking powder, baking soda, and salt.
Mixing Batter
- In a separate mixing bowl, beat together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg, vanilla extract, and almond extract until well combined.
- With the mixer on low speed, add the dry ingredients to the butter mixture in two portions, alternating with the buttermilk. Mix just until combined.
Baking
- Divide the batter evenly among the muffin cups, using about three tablespoons per cup.
- Bake for 16–20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the pan for five minutes, then transfer them to a wire rack to cool completely.
Making Frosting
- Beat the softened cream cheese and unsalted butter together until smooth.
- Gradually mix in the honey and lemon zest, then add confectioners’ sugar starting with 1½ cups, adjusting to reach the desired consistency.
- Mix in vanilla extract and a pinch of salt, beating until fluffy.
Finishing Touches
- Once cupcakes are completely cooled, frost them using a spoon or spatula.
- Garnish with chopped pistachios and coarse sugar before the frosting sets.
Notes
Store cupcakes in an airtight container in the fridge for up to five days. For richer flavor, consider toasting pistachios lightly before grinding them.
