  • 6-8 pieces corn tortillas Serves as the vessel for the filling.
  • 1-2 tablespoons oil For cooking the ingredients.
  • to taste salt and pepper Crucial seasoning for flavor enhancement.

Method

Preparation
  1. Remove the base of the squash blossoms, discarding the rough, green parts. Gently rinse the blossoms under cold water and shake off excess moisture.
  2. Heat a pan over medium heat and add a tablespoon or two of oil. Once hot, add the sliced onions and diced jalapeño, cooking for about three minutes until soft.
  3. Add the minced garlic and diced tomato to the pan, stirring until the tomato breaks down and becomes mushy, around 3-5 minutes.
  4. Incorporate the squash blossoms into the pan, cooking for no more than one minute until they wilt. Season with salt and pepper, then remove from heat.
Cooking the Quesadillas
  1. Preheat a comal or griddle over medium heat. Place a corn tortilla on the hot surface and warm for about one minute, then flip.
  2. On one half of the tortilla, add 1-2 tablespoons of vegan cheese followed by a generous helping of the squash blossom filling. Fold the tortilla over to form a quesadilla, pressing down gently.
  3. Cook the quesadilla until the cheese has melted and the tortilla is golden brown, around two minutes. Flip to crisp the other side, then remove from heat.
  4. Repeat the process for the remaining tortillas and filling.

Notes

Customize fillings by adding other vegetables or spices. For extra crunch, lightly brush the tortillas with oil before heating.
