Preparation
- Preheat your oven to 400°F and prepare two large sheet pans.
- Dice the potatoes into 3/4-inch pieces and place in a large mixing bowl.
- In a small bowl, combine parmesan, garlic powder, onion powder, paprika, oregano, and 1/4 tsp salt.
- Drizzle 1 tbsp olive oil over the potatoes, sprinkle the seasoning mix, and toss until coated.
- Spread the potatoes on one baking sheet.
Roasting
- Bake the potatoes for 30 minutes, flipping them mid-way.
- While the potatoes roast, toss broccoli florets with 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper.
- Spread broccoli on the second baking sheet and roast for 20 minutes, stirring halfway through.
Cooking the Chicken
- Slice the chicken breasts lengthwise.
- In a small bowl, mix dried oregano, dried parsley, dried basil, garlic powder, onion powder, salt, and black pepper.
- Cover the chicken with the herb mixture.
- Heat 1 tbsp of olive oil in a skillet. Cook the chicken for 5-6 minutes on each side until browned.
- Let the chicken rest for 5 minutes before slicing into strips.
Assembly
- Divide the roasted potatoes, broccoli, and sliced chicken into four containers.
- Add 2 tbsp of ranch dressing to four small containers inside the meal prep containers.
Notes
Marinate the chicken in ranch dressing for extra flavor. For crisper potatoes, pre-cook cubes in boiling water for a few minutes before roasting.
