Preparation
- Preheat your oven to 400 degrees Fahrenheit (205 degrees Celsius).
- Remove any stalks from the fennel bulbs, cut each bulb in half lengthwise, and slice each half into 1/2 inch thick pieces.
- Arrange the fennel slices on a parchment-lined baking sheet, ensuring they are evenly spaced without overlapping.
- In a small bowl, combine the olive oil and minced garlic. Brush this mixture evenly over the sliced fennel.
- Sprinkle the thyme, salt, and black pepper uniformly over the fennel.
Cooking
- Place the baking sheet in the preheated oven and roast the fennel for 25 minutes.
- If using parmesan, sprinkle it over the fennel after 25 minutes and return the tray to the oven for an additional 10 minutes.
- After a total of 35 minutes, check for tenderness. If needed, roast for an additional 5-8 minutes.
Serving
- Once done, remove the fennel from the oven and serve warm.
Notes
Consider using rosemary or oregano for different flavors. Add red pepper flakes for some heat. For added crunch, toss pine nuts on top during the last few minutes of roasting. Store leftovers in an airtight container for up to three days, or freeze for up to a month.
