Ingredients

For the Herb Mixture
  • 1/3 cup softened ghee (or butter)
  • 1 tsp dried thyme
  • 1/2 tsp dried sage
  • 1/2 tsp dried rosemary
  • 2 cloves garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp pepper
Main Ingredients
  • 2 large turkey legs
  • 2/3 cup chicken or turkey stock

Method

Preparation
  1. Preheat your oven to 350º Fahrenheit (175º Celsius).
  2. In a medium-sized bowl, stir together the softened ghee or butter with the dried herbs, minced garlic, salt, and pepper.
  3. Pat the turkey legs dry with a paper towel and place them in a baking dish large enough to lie flat.
  4. Gently separate the skin from the meat of each leg and rub the herb mixture underneath the skin and all over the top.
  5. Pour the chicken stock into the bottom of the baking dish.
Cooking
  1. Transfer the dish to the oven and cook the turkey legs for about 90 minutes. Ensure the internal temperature reaches 170º Fahrenheit.
  2. Baste the turkey legs with the liquid from the pan every 30-40 minutes for extra flavor.

Notes

For extra crispy skin, consider broiling the turkey legs for a few minutes at the end of the cooking time. You can also experiment with different herbs for unique flavors.
