Preparation
- Begin by pouring 1 tablespoon of olive oil into your skillet. Place it on the stovetop and turn the heat to medium.
- While the oil is heating, dice your onion and chop the cilantro. Set the cilantro aside for later.
Cooking
- Once the oil is hot, add the diced onion to the pan. Sauté for about 5-10 minutes until the onion is soft and translucent.
- Drain and rinse your black beans. Add them to the skillet along with the shredded chicken, chopped cilantro, taco seasoning, and water. Stir until well combined and allow heating thoroughly.
Assembly
- Chop your lettuce into bite-sized pieces and lay a generous bed in each serving bowl.
- Add the meat mixture on top of the lettuce. Finish with your desired toppings such as avocado, guacamole, pico salsa, Baja sauce, red onion, shredded cheese, sour cream, cherry tomatoes, black olives, and chopped green onions.
Serving
- Serve with crispy tortilla chips on the side for some extra crunch.
Notes
Season to taste and adjust the taco seasoning as necessary. For quicker meals, use pre-cooked shredded chicken or rotisserie chicken. Experiment with vegetables for variety.
