Ingredients

Main Ingredients
  • 1 pound shrimp (peeled and deveined) Tender morsels offering a luscious bite.
  • 1 cup sweet corn (fresh or frozen) The star ingredient for natural sweetness.
  • 1 tbsp fresh dill (minced) Adds a light, grassy note.
  • 1 tsp lemon zest Provides refreshing citrus flavor.
  • 1/2 tsp paprika Enhances overall flavor with subtle warmth.
  • 1/2 tsp salt Balances sweetness of corn and savory shrimp.
  • 1 green onion (finely sliced) Adds a fresh layer of flavor.
  • 1/2 cup avocado oil (for frying) Healthy option with high smoke point.
For Garnish
  • to taste fresh chives For a lovely touch of color and flavor.
  • to taste lemon wedges Ideal for squeezing over fritters.

Method

Preparation
  1. Place half of the shrimp in a food processor and pulse until a paste-like consistency forms.
  2. Chop the remaining shrimp into small bite-sized chunks.
  3. In a mixing bowl, combine the shrimp paste, chopped shrimp, and all other ingredients: green onion, fresh dill, paprika, salt, lemon zest, and sweet corn. Mix until thoroughly combined.
  4. Line a baking sheet with parchment paper. Form the shrimp and corn mixture into 6-8 patties and place them on the sheet. Freeze for about 1 hour to firm them up.
Cooking
  1. Heat about ½ cup of avocado oil in a pan over medium heat. Once hot, add the patties and cook for about 3 minutes per side until golden brown.
  2. Transfer the fritters to a wire rack to drain any excess oil.
Serving
  1. Serve the fritters warm, garnished with fresh chives and lemon wedges.

Notes

For extra zest, add lime zest. Consider adding jalapeños for spice. Ensure the oil is hot enough to prevent greasy fritters. Experiment with fresh herbs for variety.
