Method

Preparation
  1. In a small bowl, whisk together honey, chipotle peppers, adobo sauce, minced garlic, Dijon mustard, cumin, lime zest, lime juice, and salt. Ensure all ingredients are thoroughly mixed.
  2. Butterfly the chicken breasts for even cooking. Marinate the chicken in most of the prepared marinade for at least 30 minutes and up to 2 hours, reserving 1/4 of the marinade.
  3. While chicken marinates, wash and chop romaine lettuce, and prepare black beans, corn, tomatoes, avocado, and red onion.
Cooking
  1. Heat a large skillet or grill pan over medium-high heat with olive oil. Remove chicken from marinade and discard marinade used.
  2. Cook chicken for 1-2 minutes until browned before flipping.
  3. Baste chicken with reserved marinade, cook for another 1-2 minutes, then reduce heat, cover, and cook for an additional 8-10 minutes until internal temperature reaches 165°F.
  4. Remove cooked chicken from the skillet and let it rest for 5-10 minutes before slicing.
Assembly
  1. In a large bowl or serving platter, combine chopped romaine, black beans, corn, tomatoes, avocado, and red onion.
  2. Top with sliced chicken and drizzle with leftover marinade or favorite dressing. Garnish with cilantro and lime wedges if desired.

Notes

For best flavor, marinate chicken for up to 2 hours. You can grill chicken for a smokier flavor. Variations for protein include shrimp or tofu.
