  • 1 teaspoon chili powder Provides a warm kick.
  • 1 teaspoon kosher salt Enhances the flavors.
  • 1 teaspoon ground cumin Infuses a slightly nutty aroma.
  • 1/2 teaspoon onion powder Adds sweetness and depth.
  • 1/2 teaspoon garlic powder Imbues a savory essence.
  • 1/2 teaspoon paprika Contributes a subtle smokiness.
  • 1 4-ounce can diced green chiles, drained Offers a mild, spicy kick.
  • 28 ounces enchilada sauce (canned or homemade) A rich sauce that adds moisture and flavor.
  • 3 cups grated sharp cheddar cheese Creamy and flavorful, the star of the dish.

Method

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a skillet over medium-high heat, add the olive oil and ground beef. Stir in the chili powder, kosher salt, ground cumin, onion powder, garlic powder, and paprika. Cook until the meat is browned, about 5-7 minutes.
  3. Stir in the drained diced green chiles and 2/3 cup of the enchilada sauce. Remove from heat and set aside.
  4. Pour approximately 3/4 cup of the enchilada sauce into the bottom of a 9x13-inch baking dish.
  5. If using corn tortillas, wrap them in a damp paper towel and heat in the microwave for about 45 seconds.
  6. Take one warmed tortilla, spoon about 3 tablespoons of the beef mixture into the center, and add 2-3 tablespoons of grated cheddar cheese. Roll tightly and place seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
  7. Pour the remaining enchilada sauce evenly over the rolled enchiladas and top with the remaining cheddar cheese.
  8. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and continue baking for an additional 5-10 minutes until the cheese is bubbly and fully melted.
  9. Let cool slightly before serving and top with avocado, sour cream, and any additional garnishes you enjoy.

Notes

If you want extra heat, consider adding diced jalapeños to the beef mixture. Variations include using Monterey Jack or a Mexican blend of cheese, and experimenting with toppings such as olives, green onions, or cilantro.
