Preparation
- Preheat your oven to 350°F (175°C) and lightly spray a 9×13 casserole dish with non-stick cooking spray.
- Steam the carrots and broccoli until soft, about 4-5 minutes in a microwave.
- Cook the minute rice according to package instructions until light and fluffy.
Cooking the Sauce
- In a small saucepan, combine the soy sauce, water, brown sugar, rice vinegar, sesame oil (if using), ground ginger, minced garlic, and honey. Bring to a gentle boil.
- Mix the cornstarch with the 6 tsp water until smooth, then gradually stir into the boiling sauce until thickened. Remove from heat.
Assembling and Baking
- In the prepared casserole dish, layer the shredded chicken, followed by the cooked rice, steamed carrots, and broccoli.
- Pour the teriyaki sauce over the top and gently combine. Reserve some sauce for drizzling later.
- Bake for 15 minutes until heated through. Serve immediately.
Notes
For added flavor, consider marinating the chicken in teriyaki sauce beforehand. Top with toasted sesame seeds or fried onions before serving. Substitute with tofu or shrimp if desired, or use brown rice for a nuttier flavor.
