Ingredients

For the chicken coating

  • 1/4 cup whole wheat flour Improves adhesion of the crispy coating.
  • 2 large eggs Acts as glue for the coating.
For the panko coating
  • 1 1/2 cups panko crumbs Provides a unique crunch.
  • 1 teaspoon salt Enhances flavor.
  • 1 teaspoon smoked paprika Adds depth to flavor.
  • 1/2 teaspoon garlic powder For additional flavor.
  • 1/4 teaspoon ground black pepper To taste.
Cooking essentials
  • as needed non-stick cooking spray To ensure chicken bites don’t stick.

Method

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. Line a baking sheet with parchment paper, spread the panko crumbs in a single layer, and lightly spray with cooking spray.
  3. Bake the panko crumbs for about 5 minutes, stirring occasionally until golden brown.
Coating the Chicken
  1. In a large ziplock bag, combine the whole wheat flour and chicken pieces. Seal and toss until chicken is lightly coated.
  2. In a shallow bowl, whisk the eggs until well combined.
  3. In another shallow bowl, mix the cooled toasted panko crumbs with salt, smoked paprika, garlic powder, and black pepper.
  4. Dip the floured chicken pieces into the egg wash and then transfer them into the panko mixture, ensuring they are well coated.
Air Frying
  1. Place the coated chicken pieces in a single layer in the air fryer basket. Cook at 400°F for 6 minutes.
  2. Flip the nuggets and continue cooking for an additional 5-6 minutes until they reach an internal temperature of 165°F.
  3. Repeat the process with any remaining breaded chicken.

Notes

For added flavor, mix fresh herbs into the panko coating. You can skip toasting the panko for a quicker preparation, but toasting enhances flavor and crunch.
