Ingredients

For the sauce
  • 1/2 cup butter (cut into large cubes or slices) The star ingredient that ensures a creamy base for your sauce.
  • 2 cups heavy whipping cream Adds a rich, velvety texture that coats your pasta beautifully.
  • 1 clove garlic (minced) Infuses a delightful aroma and mild spiciness to the dish.
  • 3/4 teaspoon garlic powder Enhances the garlic flavor, making it even more aromatic.
  • 3/4 teaspoon Italian seasoning Adds Italian flair with herbs that complement the creamy sauce.
  • 1/4 teaspoon Kosher salt Brings out the flavors of the other ingredients without any harshness.
  • 1/4 teaspoon pepper A gentle kick that balances the richness of the sauce.
  • 2 cups freshly grated Parmigiano-Reggiano cheese The crown jewel that melts into the sauce, making it irresistibly cheesy.
  • to taste Fettuccine noodles or your favorite pasta Perfect for soaking up all that creamy goodness.

Method

Preparation
  1. In a large nonstick skillet over medium-low heat, combine the butter and cream. Gently whisk until the butter is fully melted, merging with the cream to form a luscious base.
  2. Once melted, whisk in the minced garlic, garlic powder, Italian seasoning, salt, and pepper. Continue whisking until the mixture is smooth and combined.
  3. Bring the sauce to a low simmer. Be cautious not to boil it, as this could cause the cream to separate. Stir it gently for about 3-4 minutes, allowing it to thicken slightly.
  4. Gradually stir in Parmesan cheese, allowing it to melt completely, resulting in a smooth and creamy Alfredo sauce.
  5. Remove the sauce from the heat and toss in your cooked fettuccine noodles or your favorite pasta, ensuring each strand is generously coated. If the sauce seems too loose, let it rest for 2-3 minutes to thicken before serving.

Notes

For an extra layer of flavor, consider adding a pinch of nutmeg along with the spices. If you want a touch of heat, red pepper flakes can be a delightful addition. Always use freshly grated Parmesan for the best melting results; pre-grated cheese often contains anti-caking agents that can affect the creaminess. Store any leftover sauce in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm it on the stove over low heat, stirring frequently. Experiment with different cheeses like Pecorino Romano for a unique twist.
