Preparation
- Preheat your oven to 350°F (175°C).
- Melt 3 tablespoons of unsalted butter in a skillet over medium heat.
- Add the chopped pears, granulated sugar, 1/4 cup flour, 1/2 teaspoon ground cinnamon, and salt to the skillet. Stir until well mixed.
- Cook the mixture, stirring frequently, until the sugar dissolves and it becomes bubbly, about 2 to 3 minutes.
- Remove from heat and stir in 1/2 teaspoon of vanilla extract.
- Transfer the filling into a 1-quart baking dish.
Making the Topping
- In a mixing bowl, combine 1 1/2 cups all-purpose flour, 1/2 cup brown sugar, baking powder, 1 teaspoon cinnamon, cardamom, ginger, allspice, nutmeg, and a pinch of salt.
- Add the cold butter cubes and mix until it resembles small peas.
- Gradually mix in the milk, stopping as soon as the dough comes together.
- Drop tablespoonfuls of dough over the pear filling.
- Sprinkle with sanding sugar if desired.
Baking
- Place the baking dish on a lined, rimmed baking sheet to catch any potential spills.
- Bake for about 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
Serving
- Serve warm or at room temperature.
Notes
Use ripe pears for best flavor. Avoid overmixing the topping for light texture. Experiment with spices as desired.
