For the spice mix
  • 1.5 tablespoons olive oil Adds depth and moisture to the chicken.
  • 1.25 teaspoons salt Essential for enhancing the overall flavor of the spices.
  • 2 teaspoons garlic powder Infuses the chicken with a savory, robust taste.
  • 2 teaspoons chili powder Adds warmth and a hint of smokiness.
  • 1 teaspoon ground cumin Offers an earthy flavor.
  • 0.5 teaspoon paprika Contributes color and a subtle peppery note.
  • 0.5 teaspoon smoked paprika Intensifies the BBQ-like smokiness.
  • 0.25-0.5 teaspoon cayenne pepper (to taste) Optional for added heat.
For the chicken and glaze
  • 8 pieces boneless, skinless chicken thighs (about 2.5 lbs or 1 kg) Trimmed of fat for a juicy bite.
  • 5 tablespoons honey Adds sweetness that caramelizes.
  • 3 tablespoons cider vinegar (divided) Provides acidity to balance the sweetness.

Method

Preparation
  1. Set an oven rack in the top position and preheat your broiler. Line a baking sheet with heavy-duty aluminum foil for easy clean-up.
  2. In a large bowl, whisk together the olive oil, salt, garlic powder, chili powder, cumin, paprika, smoked paprika, and cayenne pepper (if using).
  3. Add the chicken thighs and toss them to coat evenly with the spice mix.
  4. Arrange the seasoned chicken on the prepared baking sheet, ensuring space between each piece.
Cooking
  1. Broil the chicken for 10 minutes, flipping halfway through.
  2. In a small bowl, whisk the honey with 1 tablespoon of the cider vinegar until well combined.
  3. Brush half of the honey glaze over the chicken and return it to the broiler for 1-2 minutes.
  4. Flip the chicken, brush with the remaining honey glaze, and broil for another 1-2 minutes until caramelized.
  5. Sprinkle with the remaining 2 tablespoons of cider vinegar and transfer to a serving platter.

Notes

For optimal flavor, marinate the chicken overnight in the spice mixture. Cooking times may vary based on your broiler's strength.
