Preparation
- Set an oven rack in the top position and preheat your broiler. Line a baking sheet with heavy-duty aluminum foil for easy clean-up.
- In a large bowl, whisk together the olive oil, salt, garlic powder, chili powder, cumin, paprika, smoked paprika, and cayenne pepper (if using).
- Add the chicken thighs and toss them to coat evenly with the spice mix.
- Arrange the seasoned chicken on the prepared baking sheet, ensuring space between each piece.
Cooking
- Broil the chicken for 10 minutes, flipping halfway through.
- In a small bowl, whisk the honey with 1 tablespoon of the cider vinegar until well combined.
- Brush half of the honey glaze over the chicken and return it to the broiler for 1-2 minutes.
- Flip the chicken, brush with the remaining honey glaze, and broil for another 1-2 minutes until caramelized.
- Sprinkle with the remaining 2 tablespoons of cider vinegar and transfer to a serving platter.
Notes
For optimal flavor, marinate the chicken overnight in the spice mixture. Cooking times may vary based on your broiler's strength.
