Preparation
- Toast the chiles on a heated griddle or pan for 2-3 minutes, turning frequently to avoid burning.
- Transfer the toasted chiles to a heatproof bowl, pour in 1 cup of hot water, and soak for about 5 minutes until pliable.
- Seed and devein the chiles, saving the soaking water. In a blender, combine the soaked chiles, garlic, oregano, thyme, clove, cinnamon, bouillon, laurel leaves, salt, and pepper with the reserved water. Blend until smooth.
- In a large pot, heat 2 tablespoons of oil over medium-high heat. Season the roast beef with salt and pepper, then sear on all sides until browned.
Cooking
- Transfer the seared beef to the slow cooker and pour the chile mixture over the meat. Add enough water to cover the meat completely.
- Set the slow cooker on low heat and let it cook for 6-8 hours until the beef is tender.
Serving
- Once cooked, shred the beef using two forks. Serve with diced onions, fresh cilantro, and warm tortillas.
Notes
For extra flavor, marinate the beef overnight with spices. Adjust the number of chiles based on desired spice level. Add cream or sour cream if sensitive to spice.
