Preparation
- Preheat your oven to 375°F (190°C) and set an oven rack in the middle position. Grease an 8-inch square or a 2-quart baking dish with butter.
- In a large bowl, toss the blueberries with the sugar and flour until well coated. Transfer this mixture to your prepared baking dish.
- Dot the blueberry mixture with pieces of butter.
Making the Biscuit Topping
- In a medium bowl, combine the flour, 6 tablespoons of sugar, lemon zest, baking powder, baking soda, and salt.
- Cut in the cold chunks of butter until the mixture resembles coarse crumbs.
- Slowly add the buttermilk and mix gently until just combined. Avoid overmixing.
Assembly and Baking
- Dollop the biscuit batter over the blueberries in 8 to 10 spoonfuls.
- Sprinkle the remaining tablespoon of sugar over the biscuit batter.
- Bake the cobbler for approximately 35 minutes until the fruit is bubbling and the top is golden brown.
- If the top is golden but the center isn't cooked, cover with foil and bake for an additional 10 minutes.
- Cool for 15 to 20 minutes before serving.
- Serve warm with vanilla ice cream or whipped cream.
Notes
For best results, use fresh blueberries. Keep butter cold when making the biscuit topping. Cobblers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
