  • 70 ml Water Used to adjust the marinade and sauce consistency.
  • 1 Cucumber Balances the dish and adds freshness.
  • 500 g Cooked Rice Absorbs the delicious broth.
  • Sambal For serving; adds spice.

Method

Preparation
  1. Bash the fresh ginger and garlic cloves together, then transfer to a saucepan with the chicken stock. Heat over medium to meld flavors.
  2. Trim and slice spring onions; add the whites to the simmering stock.
  3. Marinate chicken thighs with kecap manis, salt, and ground white pepper. Set aside.
Cooking
  1. In a frying pan, heat neutral oil over high heat. Sauté spring onion greens until wilted; set aside.
  2. Add marinated chicken to the pan, cooking until caramelized (7-8 minutes). Pour in reserved marinade and water, stirring until the sauce thickens.
  3. Thinly slice the cucumber and season with salt; reheat your cooked rice.
Serving
  1. Divide hot rice into bowls. Ladle garlic ginger broth over rice, topped with caramelized chicken and cucumber. Drizzle with sambal and sesame spring onion oil.

Notes

For deeper flavor, marinate chicken for a few hours. Always adjust seasoning in the broth to taste. For crispier chicken, sear it before adding the marinade.
